Food Science and Nutrition

The sequence of this master's tracks food along its route into the body and then into the population. It opens at the molecular end, with food chemistry and biochemistry beside human nutrition and metabolism. It then moves to processing and preservation technologies, where food is handled as something manufactured at scale. The taught year closes with nutrition in disease prevention and public health. The same substance is examined three times over: as chemistry, as a manufactured product, and as a determinant of population health.

Deciding which of those vantage points interests you most is worth doing early, because the graduate roles named here sit at different points along that chain: food scientist and food safety consultant on the production side, dietetic counselling closer to individuals, public health advisor at the population end. The calendar is also short by ETH standards, three semesters across eighteen months with the last reserved for independent research, so there is little room to change direction once the taught part is under way. The programme is full-time and taught in English at ETH's Zurich campus.
